Why weren't fighters used more effectively against the Japanese Kamikazi. At least they never seem to show up in documentaries. You would think they would be easy targets

A large number of them were shot down by interceptors. Radar warning was not perfect, neither was the control of the interceptors. The Japanese understood some of the limits of radar and tried to work around it. They sent a portion of the aircraft as diversions, turning them away when the US interceptors took the bait. Other diversionary groups turn out the be Japanese interceptors who tied up the US fighters while the attack group slipped by. The size of the kamaikaze attack was unexpected and the US interceptor allocation inadaquate?

a lot of the ships the kamikazes attacked were outlying destroyers acting as radar pickets, one of their purposes was to absorb such attacks

that and a standard kamikaze tactic was to attack in two groups one high and one at wave top level.
