This counts for everyone, from Hannibal to Paton.
My personal choice would be Wellington, as the only defeat was suffered in the siege of Seringapatam in 1799 when he was a 29 year old colonel of the 33rd. He successfully defeated all of Napoleans Marshells and the little Corsican himself.

Subudai is really one of the unknown geniusses of military history. He was the most talented and trusted general of Genghis Khan. Unlike many of the other Mongol generals he was not from the nobility. One of his talents was his extraordinary memory. He could draw a mapof everywhere he has traveled. That is why he always led the vanguard or expedionary armies.

He was especially dangereous when he had shared command with Jebe Noyan (Noyan means noble). They were the best commander pair in the history. Subudai had extraordinary battlefield skills. And Jebe Noyan had the agressiveness and killing insticts. Also being good friends helped. I think no general from nobility other than Jebe wanted to work with Subudai.

They served together from China to Russia.
Subudai was the first Mogol commander who appreciated Chinese fire power.
Maybe one day I can write more detailly about them.

A bit of History on Subodai's campaign into Europe.  Something like 1/4 of Subodai's invasion force into Western Europe consisted of Chinese Crossbowmen and Siege Engineers, due to Subodai's intelligence gathering networks that mapped out the major castles fortifications in Poland, Hungary and East Germany. 

An interesting footnote is that the Medival Europeans lost every major battle of that campaign while outnumbering the Yuan forces every time.  But over the centuries the stories of those battles somehow morphed into tales of European Victories against Mongol while being outnumbered themselves.

The actual details of the invasion including the battles of Leignitz and Mohi were recorded in far better detail by Chinese seige engineers who came along for the trip such as ?? and the more famous Chinese advisor ???? (yeliu chucai).  But these weren't found again until the early 19th century.

But bottom line Subodai has to be the best military leader in human history.
